Here’s another quick and easy recipe for a holiday breakfast or brunch. For this one, you just whip up the egg mixture and then let guests pick whatever ingredients they want to add-in. The recipe below makes just one serving. That way you can make one at a time or you can adjust the basic recipe to make as much of the egg mixture as you want. Enjoy!
Mini Egg and Cheese Casseroles
3 eggs
1 tablespoon milk
Pinch dry mustard
Pinch black pepper
1 slice Canadian bacon
1/2 slice whole wheat bread
2 tablespoons shredded cheddar cheese
Optional add ins: chopped green or red peppers, chopped scallions, chopped red onion, chopped mushrooms, assorted fresh herbs
Place Canadian bacon in the bottom of a deep oven-safe ramekin or other individual-size casserole dish. Tear the bread into bite-size pieces and place over the Canadian bacon. Whisk eggs, milk, dry mustard and black pepper in a small bowl. Stir in cheese and any of the optional add-ins. Pour egg mixture over the bread. Bake in a preheated 350 degree F oven for 35-45 minutes or until eggs are cooked through. Makes 1.
Note: The eggs puff while baking and a small amount could spill over so it’s best to place the baking cups on a cookie sheet.
