With a season of parties and get-togethers coming up, it’s always good to have a new appetizer recipe. Here’s one to try. It’s loaded with flavor! Serve it with fresh veggies, crusty bread slices, pita chips, blue corn tortilla chips or assorted crackers. It also makes a good spread for sandwiches, especially veggie sandwiches. That’s because it’s high in protein. The entire recipe has almost 40 grams of protein (and 21 grams of fiber). Enjoy!
White Bean Dip and Spread
1 (15 oz) can white beans, rinsed and drained
2 tablespoons nonfat plain Greek yogurt
2 tablespoons light sour cream
1/3 cup feta cheese crumbles
1 tablespoon olive oil
1/2 teaspoon coarse ground black pepper
1/4-1/2 teaspoon garlic powder
Paprika (optional)
Combine everything except paprika in a food processor or blender and process or blend until combined. Place in a bowl and garnish with paprika, if desired. Serve with crackers, crispy breadsticks, and/or fresh vegetables, or use it as a sandwich spread.
*Note: If the dip gets too thick after sitting in the refrigerator, you can stir in a little or milk or sour cream until it reaches the consistency you want.
