Are you tired of the same old side dish? Then I’ve a got a new one to add to your rotation. It’s quick and simple and it’s healthier than a highly-processed, overly salty side dish from a box or bag.
This recipe makes a great side dish for grilled or roasted pork or pot roast. You can use any kind of apple you want. I made this last night and used Zestars, a tart yet slightly sweet variety. For the onions, if you can’t find sweet onions, use red/purple onions. (A regular white onion is too harsh.)

Caramelized Onions and Apples
1 tablespoon oil
1/2 medium sweet onion and/or red onion, thinly sliced
2 tablespoons brown sugar
2 medium apples, coarsely chopped
2 tablespoons apple cider vinegar
2 cloves garlic, minced
Dash of Kosher salt
Heat oil in a medium skillet. Add onions and sauté for a few minutes. Stir in brown sugar, apples and vinegar. Sauté until apples just begin to soften. Add garlic. Continue sautéing until onions are softened and apples are desired consistency. Season with Kosher salt. Makes 2-3 servings.
