In my last post, I wrote about apple nutrition, so to encourage you to eat more apples, I’m giving you this baked apple recipe. It’s easy! Just stuff the apples and bake. The result is a rich, sweet and nutritious dessert. Or you could have it for breakfast, served with a dollop of Greek yogurt. Yum!
Baked Apples
2 medium crisp apples
¼ cup brown sugar
1 teaspoon cinnamon or apple pie spice
2 tablespoons dried cranberries, dried
cherries or raisins
2 teaspoons butter
¼ cup water or apple cider
Core apples and peel about an inch of skin off the top of the apple. Place apples in an 8×8-inch baking pan. Combine brown sugar, cinnamon, and dried cranberries and divide mixture among the apples, stuffing it into the middle of each apple. (It’s okay if some spills out into the dish.) Top each apple with 1 teaspoon butter. Pour water around apples in pan. Bake in preheated 375 degree F oven for 45-55 minutes or until apples are tender, basting apples with liquid every 20-25 minutes. Makes 2 servings.
